The Elaboration Cellar 

This boasts the very best wine making technology in the world. Whole, clean, carefully selected grapes are brought here within three hours of harvesting. The empty crates – wich hold only 20 Kilos of grapes- are immediately machine washed to remove any earth and prevent the fermentation of even the slightest portion of grape juice. In all of the numerous varieties elaborated, stainless steel is the only material in contact with the grapes, the grape juice and the wine. The fermentation temperatures are manteined by remote control and all the operations are carried out physically as naturally as a child playing, with total respect of the enviroment.
